Work in Australia

I have been looking at going to Oz to study a course which will include the AQF 3 in Commercial Cookery (recognised trade qualifications for a cook).
Firstly his course is 2 years in duration and secondly this particular course also provides 900hours work experience. This 900 hours work experience satisfies the TRA requirments of work experience on an Australian gained qualification.
Generally on this basis if I can do the above then I can apply (within 6months of the course end date) apply to migrate as a skilled migrant.
Currently a Chef/Cook is a 60point occupation. This could change in the next 2 years, who knows!
The alternative is to go on a WHV and then do the farm, etc work and apply for a 2nd year WHV. However, I am wondering if anyone knows if I can work on the farms in the area that lacks people for my second year and have my employer sponsor me for skilled migration? Considering I would have around 12 months experience and it is a job that can not always be filled by Australians and PRs?
